I've had a request to post more recipes for vegetable side dishes and I'm more than happy to do so. (I love requests!)
Here's what we had for dinner tonight to go along with our butterflied leg of lamb. If you can boil water you can make this.
MASHED CAULIFLOWER WITH CHEVRE
- 1 large head of cauliflower, remove core and discard, break into florets
- 2-3 ounces of chevre, softened (you could even use an herbed chevre)
- a splash (maybe a tablespoon) of half-and-half, milk, or plain, unsweetened soy milk
- salt and pepper to taste
Bring a large pot of salted water to a boil. Add cauliflower and cook until softened about 5-7 minutes. Drain well and return to pot.
Add chevre, whatever dairy or non-dairy liquid you choose, and the softened chevre. Stick blend until it's the consistency of mashed potatoes (or as close to it as you can get). Salt and pepper to taste. Transfer to serving dish and serve.
