When I first read the recipe on Nami-Nami, one of my daily feed reader must-reads, I couldn't stop thinking about it. And thinking about it. And thinking about it.
I made it and was...a little disappointed. It just didn't meet my overblown expectations. I deviated from the recipe just a bit by sauteing some garlic and shallots in a little olive oil before adding the tomatoes and coconut milk. I added enough grated fresh horseradish to give it zing. Tasted for salt and pepper, added a little agave nectar (honey would work, too) for just a hint of sweetness, whizzed it up, and just wasn't wowed. Should I have used regular instead of lite coconut milk? Did I make a perfectly simple recipe needlessly complicated? What could have made it better?
But then.
I let it sit overnight.
And yeah. That was what I was waiting for.
