For those who commented on my thrown-together broccoli "casserole" which I prepared for my $10 Dinner Challenge, here is the recipe...which I hesitate to even call a recipe since it's so not.
- 1 bunch of broccoli, washed, trimmed, and chopped (I use the whole broccoli, not just the crowns)
- 1/2 onion chopped
- 1-2 cloves of garlic minced
- extra-virgin olive oil
- salt and pepper
- a handful of shredded mozzarella cheese
- a handful of grated parmesan cheese
Place broccoli, onion, garlic in baking dish. Drizzle with olive oil. Season with salt and pepper. Toss lightly to mix. Bake at 375º for about 30 minutes, mixing once half-way through cooking time. Remove from oven, top with cheeses, bake for 3-5 minutes more to melt cheese. Serve at once. Serves four.
This would also be wonderful topped with buttered fresh or even canned plain or seasoned bread crumbs.
