Here's what I've got going on this week. I don't know about you guys, but I'm exhausted and it's only Monday.
- Monday—My sis came over and made buttermilk-marinated fried chicken and truffled mashed potatoes and that's why I am going to bed as soon as I finishing typing this.
- Tuesday—Miso-glazed black cod, broccoli with sesame oil and garlic, salad
- Wednesday (gymnastics night)—Foodmomiac's Meatloaf, brown rice, roasted green beans
- Thursday—Vegetarian ribollita, baguette, salad
- Friday Family Movie Night—Roll your own sushi, vegetable "salads" from the Korean deli (taking a trip to the Korean market that day)
- Saturday—Date Night (as usual, I'm angling for vegetarian Indian and happily J. likes it, too)
- Sunday—not sure yet
I will definitely post recipes for the miso cod and ribollita as I make them. And you know that meatloaf. I make it all the time. It has to a favorite in your house by now and if it isn't, once you make it, it will be. (I use real onions and garlic, btw.)
My mom is in town through next week, so meals could change. I just know that after tonight's gut bomb and so much travel lately, I'd like to eat lighter fare this week.
